| About El Meson
History
Although David Huertas was born and spent most of his childhood in
Madrid, he has also lived and was educated in Belgium, Peru, Chile and
Venezuela. After earning a Bachelor's degree from Kenyon College in Ohio, he
realized his life's ambition through the restaurant business. He was graduated
with honors from the Culinary Institute of America and returned to Spain to
serve as an apprentice in some of the most renowned restaurants in Madrid and
Córdoba. Santa Fe became home in 1993 and after working in the kitchens
of Bishop's Lodge, Santacafé and La Traviata, Huertas realized the need
to open an establishment closer to his own heart. The cuisine of El
Mesón is based on both ancient and modern recipes, as well as those
handed down orally through generations of the Huertas family. In December 2000,
renovations were completed, and with the help of Huertas' new wife, Kelly, the
¡Chispa! tapas bar was opened adjacent to
the restaurant. Offering a fine array of tapas as well as a full bar, El
Mesón adds to the Andalusian atmosphere, which is complemented by a
distinguished Spanish wine list that includes special sherries and liqueurs
imported from a country full of passion, tradition and excellent food.
